Salmon Poached in Beer


  • In a large skillet melt butter over medium heat.
  • Add onion and saute until just softened.
  • Add beer and bring to a boil.
  • Reduce to a simmer, add salmon, skin side down.
  • Sprinkle salmon with salt and cover the pan.
  • Cook for 6 minutes and then flip salmon skin side up.
  • Cover and cook for 4 more minutes.
  • Remove salmon and onions to a platter and serve with lemon wedges.
